Iolanda Altomonte has been carrying out research on farm and feed management system of livestock (polygastrics and equids) in relation to the quality of the products and the improvement of environmental sustainability of the farms
the main lines of research that have involved and involve Dr. Altomonte are:

1) Use of alternative feed and agricultural by-products in animal nutrition in order to develop circular economies, improve the environmental and productive performance of livestock, safety and security of animal productions and animal welfare.
2) Effects of diet and physiological phase on the productive performance of the dairy donkey
3) Transfer of plant bioactive compounds (lipid-soluble compounds and phytosterols) from the diet into milk
4) Use of food waste (eg bakery products) in animal feed and potentially sustainable diets
5) Potential use of microalgae in animal nutrition. Regarding this line of research, Dr. Altomonte submitted as a Principal investigator a research project under the Italian Science Fund (MUR) (starting grant) entitled Recycling dairy by-Products for micROaLgae prOduction with in vivo and in vitro aNti-aGeing ACTIONs
6) Effects of pasture and grazing season on the nutritional quality of milk and dairy products. The studies focused on bioactive compounds (phytosterols, fatty acids, fat-soluble vitamins) and aromatic compounds
7) Energy level of the diet and morphometric characteristics of milk fat globules (number/ml and diameter); The Institution-Instituto Nacional do Semiárido, Campina Grande, Brazil collaborated on this research topic
8) Evaluation of welfare in semi-extensive sheep farming
9) Reuse of dairy by-products as a substrate in biotechnological processes intended for the production of Chlorella protothecoides and compounds of high commercial and nutritional value (carotenoids). on this line of research she collaborated with the Department of Food Engineering, Federal University of Paraíba, João Pessoa, BrazilShe published about 100 documents of which 67 articles indexed in Scopus
