The postgraduate degree course provides training in Sensory Sciences for professionals working in the fields of food technologies and food sciences.
It addresses the fundamental principles of organoleptic expression and the nutraceutical value of the main traditional food products of the Mediterranean diet, depending on variations in production techniques.
At the same time, students explore the basic principles of human nutrition and the most popular traditional and innovative methods of food sensory analysis.
The postgraduate degree course also provides simple methodological tools that can be applied to understand and characterise the individual sensory abilities, with the aim of educating people to adopt conscious and appropriate eating habits depending on the changes in developmental age, health conditions and dietary regimes. These methods can also be applied to develop effective tools for promoting a healthy and mindful diet.
The postgraduate degree course is offered by the Department of Agricultural, Food and Agro-Environmental Sciences of the University of Pisa under the aegis of the Interdepartmental Research Centre - ‘Nutraceutics and Nutrition for Health’.

Auditors: 1750 € in a single installment
Tuition fee reductions are available for 9 students, awarded based on income and merit criteria.
